2 cups uncooked rice 1/4 cup butter 1/2 cup orzo or thin vermicelli, broken 5 cups hot water 1 tsp. salt Sauté orzo in butter stirring until lightly browned. Add rice and salt. Stir until rice has absorbed the butter. Add the water and stir. Bring to a boil. Cover, reduce heat to low and cook for about 15 minutes or until the water is absorbed. Do not stir while the rice is cooking. Remove from heat and let sit another 5 minutes or more before stirring or serving. Serves: 6-8.
