1 tripe 2 tsp. baking soda in 2 cups water 1 cup chopped lamb 1/2 cup shelled chick peas 1 cup rice 2 bay leaves Dash cinnamon Salt and pepper to taste Soak tripe in baking soda for several hours. Drain and clean thoroughly. Combine lamb, chick peas, rice, salt, pepper and cinnamon. Make a pocket of 2 or 3 pieces of the tripe. Stuff with the lamb and rice mixture and sew together. Place in boiling water and add bay leaves. Cook about 40 minutes. Remove bay leaves. Serve liquid as a soup garnished with dried mint.
