MEAT STUFFED SQUASH

(Koosa Ab-la-ma)


Koosa:
1 dozen fresh green squash (koosa) (not over 3" in
length)
1 1/2 lbs. lean beef or lamb, coarsely ground
1/4 cup pine nuts (snoobar)
Salt, pepper and cinnamon to taste
Butter or oil

Wash off squash, cut off stems, and scoop out insides.
(Lightly scrape outside of each squash.) Brown meat and add pine
nuts, salt, pepper and cinnamon. Stuff squash with meat mixture.
Fry squash in 1/2 inch butter or oil, browning on all sides. Place
neatly in baking dish. Use recipe of Ublama Laban over squash.
Serves: 6-8.

Ublama Laban:
2 quarts laban
1 tsp. flour
1 egg white
1 tsp. salt

Sift flour and strain egg white into laban. Add salt. Cook on
low heat until mixture bubbles, stirring constantly. Remove from
heat immediately. Pour laban over squash and bake in 350 degrees F oven
for 30 minutes.

This may also be served over rice (Rooz bi Shireeyee).
