1 lb. lamb or beef, ground 1/4 cup pine nuts (snoobar) 2 large eggplant 1 cup rice 1 large can tomato sauce Salt and pepper to taste Garlic powder (optional) Brown meat and snoobar in butter. Place meat mixture in casserole dish. Peel and cut eggplant in wedges and place over meat. Rinse and drain rice and spoon over eggplant. Mix one can of water with tomato sauce and add seasonings. Pour gently over rice, then add enough water to completely cover rice. Bake in oven 350 degreesF until all liquid has been absorbed and rice is completely cooked. Let set for a few minutes and turn upside down on platter. Serve as one dish meal with salad.
