1 whole chicken or 4 breasts of chicken* 4 Tbsp. butter 2 large or 3 small onions 1 can chick peas or green lima beans, drained 1 cup rice 2 cups chicken broth Salt, pepper and cinnamon to taste Clean and wash chicken well. Boil chicken until done. Remove meat from bones and cool slightly. Melt butter in saucepan, add wedge-cut onions and sauté lightly. Place boned chicken over sautéed onions. Then layer the chick peas or lima beans and the uncooked rice mixed with salt, pepper and cinnamon over chicken. Pour chicken broth over all and cover. Cook for 20 minutes or until rice is done. Pierce cooked mixture gently with fork, slightly stirring rice, being sure not to mix layers. When done, place serving platter over saucepan. Quickly overturn cooked mixture on platter. Remove saucepan gently, keeping Rooz Bit Feen in a mold-like form. Serve hot. Serves: 4-6. *2 lbs. lamb or beef cubes may be substituted for chicken.
