MEAT PIES

(Fatayer or Sfeeha)


Dough:
5 cups flour
1/2 cup oil
1 1/4 cups warm milk
1/2 yeast dissolved in 1/4 cup warm water
2 tsp. salt

Mix flour, salt and oil together, then add warm milk and dissolved
yeast. Mix with hands until well blended. Cover and let rise for
45 minutes.

Take part of the dough and pat out to 1/4 inch thickness on slightly
floured board. Cut out rounds 3 to 4 inches in diameter. Place 2
tablespoons of the meat filling in the center of dough rounds.
Shape into triangles by pinching edges together leaving a small
opening in center.

For sfeeha or for a round shape, flute edges.

Arrange on greased baking tray and bake in 400 degreesF oven until bottoms
are lightly browned. Then brown tops lightly under broiler.

Meat Filling:
2 lbs. coarsely ground lamb or beef
1 finely chopped onion
Juice of 1 lemon
1/4 cup pine nuts
Salt, pepper, and cinnamon to taste
Optional: 1 cup labanee

Combine meat filling ingredients in bowl.
