Chick Pea Preparation: 2 cups dry chickpeas (soaked overnight) 1 finely chopped onion 2 cloves garlic, minced 1 bunch parsley, finely chopped 1 tsp. salt 1/2 tsp. pepper 1 tsp. cumin Oil for frying 1/4 tsp. baking powder Combine chickpeas, onion, garlic, parsley and seasonings in food processor. Add baking powder and mix well until it forms a ball in your hand. Form into patties. Heat oil in fry pan and fry patties until dark brown. Serve with tahini sauce and pita bread. Tahini Sauce: 1/4 cup tahini 1/4 cup lemon juice 1/2 bunch parsley finely chopped 1 tomato 1 cucumber 1 onion Salt to taste Water Finely chop the tomato, cucumber and onion. Mix tahini with the lemon juice and salt. Add very little water to a thin consistency. Add vegetables and mix well.
