2 medium onions, diced
1/2 lb. shelled English walnuts
3 Tbsp. oil
Prepare filling first. Put oil, onions and walnuts into skillet and
cook for 20 minutes.
3 lbs. fresh filet of haddock
3 cups burghul wheat, medium
1 medium onion
1 tsp. coriander
Rind of one orange
1 cup oil
Rinse and soak wheat for 15 to 20 minutes and squeeze out
water. Grind or food process raw fish fine. Grind or process
remaining ingredients and add to ground fish and mix thoroughly.
Spread 1/2 of fish in mixture in baking pan 1/2 inch thick. Spread
walnut filling evenly over first layer then spread remaining fish
mixture evenly over filling. Cut in diamond shapes. Pour 1/2 cup
oil over top. Bake in 400 degrees F oven for 30 minutes. Can be served
hot or cold. Serves: 6-8.
