8 lb. fresh red snapper fish, or 4-5 lbs. fish 1/2 cup oil Sauce Ingredients: 1 tsp. oregano 1 medium onion, sliced thin 1 small jar green olives, whole 1 tsp. crushed bay leaves 1 Tbsp. capers 2 large cans tomato sauce 1/2 cup oil Salt and pepper Clean and salt fish. Pour 1/2 cup of oil in a baking pan, place fish in pan and bake in 400 degrees F oven 40 minutes. While fish is baking, prepare sauce as follows: Sauté onions 1/2 cup oil in deep skillet. Add tomato sauce, salt, pepper, oregano and bay leaves. Bring to boil, then simmer for 30 minutes. Add capers and olives to sauce and pour over baked fish. Place in oven for 15 minutes before serving. Serve hot. Serves: 4-6.
