1 cup lentils, rinsed in cold water 2 cups water 1 green pepper, sliced 2 chopped pimentos 1 onion, chopped 2 cups fresh diced tomatoes or 1 large can 4 Tbsp. olive oil Salt and pepper to taste In medium saucepan bring water and lentils to boil for 20 minutes. Sauté onion, green pepper and pimentos in oil. Add this along with tomaoes, salt and pepper to lentils and cook 30 minutes uncovered. Best served hot.
