1 or 2 lbs. lean lamb or beef, cut in large cubes
1 large cauliflower
2 quarts yogurt (laban)
1 cup water
1 Tbsp. butter
2 heaping Tbsp. flour
1 cup water
Salt and pepper to taste
In skillet, add meat, butter, salt and pepper and brown. When
meat is browned, add one cup water to cooked meat and cook slowly
until well done. (Meat will absorb all the water.) Wash
cauliflower and cut into florets. Parboil in lightly salted water.
Drain well. Stir flour and a little laban in bowl until smooth.
Add rest of laban and one cup water and beat until well mixed. In
casserole or baking dish place meat and cauliflower in layers.
Pour laban mixture over all. Place in 400 degrees F oven for about 30
minutes or more until laban thickens. Serve hot over rice.
