2 lbs. okra, fresh or frozen
Butter or oil
1 1/2 lbs. lean lamb or beef, cubed
2 cups water
2 cloves garlic, minced
1 large can tomato sauce
salt and pepper to taste
1 tsp. coriander seed (optional)
Wash okra, cut off tops of stem. Fry or broil okra in small amount
of butter or oil. Brown meat in butter. Add water, spices, tomato
sauce and garlic. Cook slowly in covered saucepan until meat is
tender, stirring occasionally. Add browned okra, juice of lemon
and cook slowly 5 minutes.
Serve with rice. (Rooz bi Shireeyee.)
