1 1/2 lbs. chopped spinach or kale, fresh or frozen
1/2 cup black-eyed beans cooked, or 1 medium can
1/2 cup burghul wheat, coarse
1/2 cup oil
1 medium onion, chopped
Salt and pepper to taste
Rinse wheat and drain. In a large sauce pan sauté onion in oil. Add
remaining ingredients and cook for 10 to 15 minutes stirring
occasionally. Stir well before serving.
