(Fatayer Sabanegh)

1 recipe fatayer dough
2 bags spinach, chopped coarsely
Juice of 4 lemons
1 large onion, chopped fine
1/3 cup oil
1/2 cup pine nuts or coarsely chopped walnuts
Salt and pepper to taste

Wash spinach in cold water and drain. Sprinkle with salt and
pepper and let stand until wilted, then squeeze until all water has
been removed. Add remaining ingredients and mix well. Place 2
heaping tablespoons of mixture in center of dough patty. Close in
triangular shapes and arrange on greased baking pan. Bake in 400 degrees
F oven until lightly browned on bottoms. Place under broiler and
bake until tops are golden brown.

Variation : 2 bags kale, chopped fine may be substituted for spinach.
