5 lbs. all purpose flour 3 cups rendered butter 1 cup sugar 2 oz. yeast 2 Tbsp. salt 3 eggs, beaten 4 cups milk or water 1 1/2 Tbsp. mahleb In a large bowl mix all dry ingredients. Push to the sides leaving a hole in middle. Dissolve yeast in warm water with a little sugar added. Melt butter and heat milk to lukewarm. Pour all liquids into the flour along with eggs and knead well. When the texture of the dough is smooth, cover with plastic cloth and let rest until doubled in size (1 1/2 to 2 hours). Cut into balls the size of a grapefruit. Cover and let rest for 30 minutes. Roll into loaves and prick with fork all over. Bake at 425 degrees F until golden brown. Yields 6-8 loaves.
