8 cups flour 2 Tbsp. sugar 1 pkg. dry yeast 1/4 cup oil 1 tsp. salt 3 cups warm water Mix dry ingredients in food processor or electric mixer using the dough blade. Gradually add water and oil and mix until dough falls from the sides. If dry, add a small amount of water until dough feels soft but not sticky. Place dough in large bowl. Cover and let rest for at least 1 hour. Cut into grapefruit size balls, cover and let rest another 20 minutes. Roll each ball into small loaves and let rest another 1/2 hour. Preheat oven to 425 degreesF. Place loaves on baking sheet and bake in bottom rack for 10 minutes, then transfer tray to top rack to brown tops. Loaves should be a golden brown. When done, brush tops with cold water. Yields 4-5 loaves. This basic dough is also used for meat and spinach pies.
