Pastry: 1 lb. filo dough - (approximately) 1 recipe of unsalted cheese (jiban) or 1 1/2 qts. ricotta cheese 4 Tbsp. melted rendered butter In a greased 11" x 14" baking pan, place 15 sheets of filo dough, buttering every 4th sheet. Crumble cheese and spread evenly over top layer. Add remaining 15 sheets of dough, again buttering every 4th sheet. Cut into 3 inch squares. Bake in 350 degrees F oven for approximately 45 minutes to 1 hour or until lightly browned. Cool. Make syrup and pour over baghajha and serve warm. Syrup: 3 cups sugar 2 cups water 1 tsp. lemon juice 1 tsp. orange blossom water Dissolve sugar in water boil 10-15 minutes. Remove from heat, add lemon juice and orange blossom water.
