1 cup light brown sugar, firmly packed 1 cup water 1/3 cup shortening 1 cup raisins 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. salt 2 1/4 cups sifted cake flour 1 tsp. baking soda 1 1/4 tsp. double-acting baking powder Combine sugar, water, shortening, raisins, spices and salt in a medium size saucepan. Bring to a boil over moderate heat. Cook 3 minutes, stirring constantly. Remove from heat and cool. Measure sifted flour. Add baking soda and baking powder and sift again. Gradually stir dry ingredients into raisin mixture. Beat well. Grease generously the bottom and sides of a 8x4x3 inch loaf pan. Pour in cake batter. Bake in slow oven at 325 degrees F for about an hour or until cake is done.
