1 Large Bunch Spinach (washed & trimmed)
1/4C Walnut Halves
1/2 Orange (cut into segments)
1/2 Grapefruit (cut into segments)
2 Green Onions (chopped)
1T Olive Oil
1T White Wine Vinegar
Dash of Cayenne Pepper
Salt and Freshly Ground Black Pepper
Combine oil, vinegar, honey and cayenne pepper; mix well.
Season to taste with salt and pepper. Toss spinach with mixture
above. Add walnuts. Arrange orange and grapefruit sections on top
and garnish with green onions. Yield: 2 servings 246 calories per
