2 Thin Slices Red or Yellow Onion
2 6 Inch Whole Wheat Tortillas
1 Large Russet Potato (washed-pierced)
2T Marinara Sauce or Red Tomato Sauce
Cook Potato in microwave on high power 8-9 minutes or until
fork-tender. Slice lengthwise in half; spoon 1T sauce over each
half. Prepare the turkey wraps, layer all ingredients on
tortillas; roll up. Mustard or hot peppers are optional. Yield:
2 servings. 497 calories per serving.
