1 Lb Butter 2C Sugar 3 Eggs 1 Lb Ricotta Cheese 2t Vanilla 4C Cake Flour 1t Baking Soda 1t Salt Frosting: 2T Butter 2C Powdered Sugar 2T Milk 1t Almond Flavoring Cream together butter and sugar, beat in eggs. Blend in ricotta cheese and vanilla. Stir together flour, soda and salt. Add to creamed mixture and beat well. Drop cookies by teaspoons onto greased baking sheets. Bake at 350 degrees for 12 minutes. DO NOT ALLOW TO BROWN. Remove and cool completely. Mix frosting ingredients until smooth. Frost when cookies are cooled.
