3 (15 1/4 oz.) cans sliced pears, drained and mashed 1 c. sugar 1/4 c. sugar 1/4 c. unsweetened applesauce 1/4 c. canola oil 3 eggs 1 1/4 c. all-purpose flour 3 tsp. ground cinnamon 1 tsp. baking soda 1 tsp. baking powder 1 tsp. ground cloves 1/2 tsp. salt In a large mixing bowl, combine the first 5 ingredients. Combine the remaining ingredients. Gradually add to pear mixture and mix well. Pour into four 5 3/4 x 3 x 2-inch loaf pans coated with nonstick cooking spray. Bake at 350 degrees for 50 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool 10 minutes before removing from pans to wire racks. Yield: 4 mini loaves (6 slices each).
