2 c. sugar
1 c. salad oil
2 tsp. vanilla
3 c. flour
2 tsp. cinnamon
1 tsp. salt
1/4 tsp. baking powder
1 1/4 tsp. baking soda
2 c. zucchini, grated
Mix all ingredients together and beat well. Gradually add
grated zucchini. If you wish, you could add 1.2 cups walnuts (I
don't). Divide batter into (2) 8 x 5-inch loaf pans
(well-greased). Bake at 325 degrees for 1 hour or a little longer. Bread
is done when a toothpick comes out clean. Makes 2 loaves.
