2 c. flour, sifted
1 1/2 tsp. baking powder
1/4 tsp. soda
1/4 tsp. salt
3/4 c. crushed pineapple
1/2 c. shortening
1 c. brown sugar, packed
1 tsp. vanilla
2 Tbsp. pineapple juice
1 c. powdered sugar
Sift flour, soda and salt. Drain pineapple and reserve syrup.
Cream shortening until soft. Add brown sugar gradually and mix
until creamy. Beat in egg, drained pineapple and vanilla. Stir in
flour mixture. Drop from teaspoon on greased cookie sheet. Bake at
350 degrees for 18 to 20 minutes. Ice cookies with glaze mixture.
