1 c. rice 1/2 stick margarine salt (dash) 2 qt. milk 3 eggs 1 1/2 c. sugar 1 1/2 tsp. real vanilla cinnamon Measure into a heavy saucepan the rice, margarine and salt. Cover rice (just barely) with water. Cover saucepan and cook slowly until all water is gone. Add milk and cook mixture over low heat, stirring occasionally, for about 1 1/2 hours until mixture gets very, very thick (you'll be able to make a path through it with a spatula). Beat together eggs, sugar and vanilla and slowly drizzle into mixture, stirring constantly. Turn into bowl and sprinkle with cinnamon. Serves a lot.
