2 c. sugar 4 eggs 2 c. flour 2 tsp. baking soda 2 tsp. cinnamon 3 c. grated carrots 1 1/2 c. chopped nuts (walnuts or pecans) 1 1/2 c. oil 2 tsp. baking powder 1 tsp. vanilla Frosting: 1 box powdered sugar 1 (8 oz.) pkg. cream cheese 1 tsp. vanilla Combine sugar and oil. Mix well. Add eggs one at a time, beating well after each one. Add flour, baking soda, baking powder, cinnamon and vanilla. Fold in grated carrots and chopped nuts. Pour into a greased and lightly floured tube pan. Bake at 350 degrees for 1 hour or until knife comes out clean.
