CARROT CAKE

2 c. sugar
1 1/2 c. oil
4 eggs
2 1/4 c. flour
2 tsp. salt
2 tsp. soda
2 tsp. cinnamon
3 c. grated carrots
1 c. chopped nuts

Cream first 3 ingredients. Add flour, salt, soda and
cinnamon. Add carrots and chopped nuts. Place in cold oven and set
at 300 degrees. Bake 1 hour or until done in middle.

Frosting:
8 oz. cream cheese, softened
1/4 c. margarine, softened
1 tsp. vanilla
1 1/2 c. confectioners sugar

Mix together cream cheese, margarine and vanilla and then add
confectioners sugar.
