1 1/2 c. pureed cooked yams 1 1/4 c. sugar 1/2 c. butter or margarine, melted 1/4 c. evaporated milk 3 eggs 1 tsp. ground nutmeg 1 tsp. vanilla 3/4 tsp. lemon extract 1 (9-inch) unbaked deep-dish pie shell or regular 9-inch pie shell In food processor bowl, combine all ingredients except pie shell. Process until well blended. Pour into unbaked pie shell. Bake for 50 to 55 minutes or until knife inserted in center comes out clean and pie is golden brown.
