1 large watermelon Syrup: 7 c. sugar 2 c. white vinegar 1/4 tsp. oil of cloves 1/4 tsp. oil of cinnamon Cube the rind of the watermelon, cutting rind and pink. Boil cubes until transparent and tender (15 to 20 minutes). Prepare syrup by mixing all ingredients, then bringing to a boil. Pour over drained cubes; let stand overnight. Drain syrup the next day, then heat and pour over cubes again. Let stand overnight. Heat cubes in syrup on the third day, then place in jars and seal. Place jars in hot water bath for 5 minutes.
