1 1/2 lb. round steak, cut into 2 x 1/4-inch strips (cut while partially frozen) 3 Tbsp. oil 1 onion, cut in 1/4-inch slices 1 clove garlic, cut up fine 2 green peppers, cut in 1/4-inch sliced 1 tsp. ginger 1 tsp. salt 1/2 tsp. pepper 1 Tbsp. cornstarch 2 Tbsp. soy sauce 3 ripe tomatoes, cut in wedges or 15 oz. can tomatoes Brown meat in hot shortening for five minutes. Add onion, green pepper, garlic, ginger, salt and pepper. Mix well and heat to boiling. Reduce heat, cover and simmer slowly for 15 minutes. Blend cornstarch and soy sauce together. Stir into meat mixture. Boil and stir for one minute. Place tomatoes on top. Cover and cook on low for three more minutes. Serve over cooked rice.
