MAMA'S VENISON

1 deer ham
1 large bottle lemon juice
1/2 box salt
2 onions
1 bell pepper
2 sticks margarine
2 Tbsp. sage
4 c. water or enough to cover meat

Place meat in the sink. Add lemon juice and salt. Cover
with water and let soak overnight or 6 to 8 hours. After soaking,
rinse meat well and place in a deep roasting pan. Add onions and
bell pepper. Add water to cover meat to 1/2 of the way.

Cover with foil and bake at 350 degrees for 1 hour. Reduce heat to
325 degrees and bake for 5 to 6 hours or until the meat is tender enough
to pick off the bone with a fork.

Remove from oven and pour broth off meat. Debone and place
back in pan. Melt margarine and pour over meat.

Mix 1 jar of Carolina Treat barbecue sauce and 1 bottle of
John Boy and Billy's barbecue sauce together. Mix meat in sauces
and place back in the oven. Bake 1 1/2 to 2 hours at 325 degrees or
until heated all the way through. Delicious served with rice.
