2/3 c. rice 1 c. flour 1 (3 or 4 lb.) chicken, cut into serving pieces 1 Tbsp. salt 1/2 c. cooking oil Cook rice in salted water for 5 minutes; set aside. Flour chicken; season. Fry in oil until brown. Pour rice over chicken. Cover and cook until chicken is tender. Add water as needed. Yields 6 servings.
