COUNTRY COLLARDS

3 slices salt pork
2 lb. collard greens, finely chopped
1 Tbsp. salt
1 tsp. sugar

Render salt pork in skillet. Wash collard greens. Add
greens, salt and sugar to pan drippings. Steam, covered, over low
heat until tender, stirring frequently. Yields 6 servings.
