2 c. corn meal boiling water, as needed 1 c. finely chopped onion oil (for deep frying) 2 tsp. baking powder 1 large egg, slightly beaten salt Mix chopped onion into dry ingredients. Gradually pour in boiling water to make a stiff mixture. Cool slightly. Beat in egg. When mixture is cool enough to handle, shape into small ovals or balls. Flatten slightly and deep-fry until golden brown. Drain and serve hot.
