OATMEAL BREAD

1 1/2 c. boiling water
1/4 c. molasses
1 cake yeast or 1 pkg.
1 c. rolled oats
2 tsp. salt
5 c. white flour
1 Tbsp. shortening
1/4 c. brown sugar

Combine cake yeast and 3/4 cup lukewarm water. Combine
boiling water, shortening, salt, molasses and brown sugar, then
add oatmeal. Stir for less than a minute or until just boiling.
Cool. Add to yeast mixture. Add flour until mixture is almost
not sticky.

Knead 8 minutes. Let rise. Punch down. Form loaves and let
rise. Makes 2 large loaves or 4 small loaves. Bake 45 minutes at
350 degrees.
