3 c. flour
1 1/2 tsp. cinnamon
1/4 tsp. baking powder
1 tsp. salt
1 tsp. soda
3 eggs
2 c. sugar
1 c. cooking oil
1 tsp. vanilla
2 c. grated zucchini
1/2 c. chopped nuts
1 tsp. flour

Sift together 3 cups flour, cinnamon, salt, soda and baking
powder. Beat eggs with sugar. Add oil. Mix well. Add vanilla
and dry ingredients. Stir in zucchini. Combine nuts with 1
teaspoon flour and stir into batter.

Pour into 2 greased and floured loaf pans and bake for 1 hour
at 350 degrees. It will also work to use mini loaf pans and this recipe
will make 4 to 6 mini loaves.
