1 c. oil
2 c. sugar
1 tsp. vanilla extract
2 c. peeled shredded zucchini
3 c. flour
1/4 tsp. baking powder
1 tsp. soda
1 Tbsp. cinnamon
1 tsp. salt
1/2 c. walnuts
Beat eggs, oil, sugar and vanilla in mixing bowl until well
blended. Squeeze zucchini dry. Add to egg mixture; mix well.
Stir in mixture of dry ingredients until moistened. Fold in

hour to 1 hour and 10 minutes or until loaves test done.
Cool in pans for 10 minutes. Remove to wire rack to cool
completely. Yields 24 servings.
