2 c. sugar 1 1/2 c. oil 4 eggs 1 tsp. cinnamon 3 c. self-rising flour 1 c. mashed sweet potatoes 1 c. chopped walnuts 1 c. raisins Combine sugar and oil in bowl until light. Stir in eggs until well blended. Add cinnamon, flour, sweet potatoes, walnuts and raisins; stir until moistened. Fill greased muffin cups 1/2 full. Bake at 350 degrees for 15 to 20 minutes or until brown. Cool for 5 minutes. Remove to wire rack to cool completely. Yields 36 servings.
