1 1/2 c. sugar 1/2 c. water 1/4 c. honey 1/4 tsp. salt 1/2 tsp. vanilla 3 c. pecan halves Combine first 4 ingredients in a saucepan; mix well. Cook mixture over medium heat, stirring constantly, until sugar dissolves. Continue cooking, without stirring, until mixture reaches soft-ball stage (240 degrees). Remove from heat. Stir in vanilla. Beat with a wooden spoon until mixture begins to thicken. Stir in pecans. Pour mixture onto waxed paper and separate pecans. Yields 4 cups.
