Cake: 1 pkg. Butter Recipe cake mix 3 large eggs 1/2 c. unsalted butter, at room temperature 1/3 c. sweetened cream of coconut (such as Coco Lopez) 1/3 c. water 1 (8 oz.) bag sweetened flaked coconut Frosting: 2 (8 oz.) cream cheese, at room temperature 1/2 c. unsalted butter, at room temperature 1/2 c. sweetened cream of coconut 3/4 c. powdered sugar 1 tsp. vanilla Combine first 6 ingredients in a large mixing bowl. Mix for 4 minutes. Pour batter in two 9-inch pans and bake for 25 minutes. For frosting, mix cream cheese, butter and cream of coconut in a large bowl until smooth. Beat in powdered sugar and vanilla. Note: Cream of coconut is available in the liquor section of most supermarkets.
