3 c. self-rising flour 1 tsp. cinnamon 3/4 c. oil 4 c. chopped peeled apples 1 tsp. vanilla extract 2 eggs 2 c. sugar 1 c. chopped pecans Stir flour and cinnamon into large bowl. Add oil, apples and vanilla. Beat for 2 minutes. Beat eggs in medium mixer bowl until light. Add sugar gradually, beating until fluffy. Stir into apple mixture; fold in pecans. Pour into greased and floured tube pan. Bake at 350 degrees for 1 hour and 10 minutes. Cool in pan for several minutes. Invert onto serving plate. Yields 16 servings.
