APPLE NUT CAKE WITH BROWN SUGAR GLAZE

3 egg
2 c. sugar
1 tsp. soda
2 tsp. vanilla
1 c. chopped pecans, broken into fourths
1 1/2 c. oil
3 c. plain flour
1 tsp. soda
3 c. coarsely chopped apples

Preheat oven to 350 degrees. Beat eggs well; add sugar and oil.
Sift dry ingredients together and add egg to mixture. Mix well.
Add apples, pecans and vanilla.

Pour batter into a 12-cup Bundt pan. Bake at 350 degrees for 1 hour
and 20 minutes. Cool in pan or on wire rack for 10 to 15 minutes.
Remove from pan and let cool completely on wire rack. Drizzle
Brown Sugar Glaze over cake.

Brown Sugar Glaze:
1/2 c. firmly packed brown sugar
1/4 c. butter or margarine
2 Tbsp. evaporated milk

Combine all ingredients in a small saucepan; cook over high
heat, stirring constantly, 2 minutes or until butter melts. Cool
to lukewarm.

Don't cook the glaze too long or it will become hard and
grainy. You can double the glaze, if desired.
