2 1/4 c. sifted all-purpose flour 1 1/4 c. sugar 2 1/2 tsp. double-acting baking powder 1/2 tsp. soda 1/2 c. shortening 1 1/2 c. mashed ripe bananas 2 eggs 1 tsp. vanilla Preheat oven to 375 degrees. Sift flour, sugar, baking powder, soda and salt. Add shortening, 1/2 cup bananas and eggs. Beat 2 minutes at medium speed with electric mixer. Scrape down bowl and beaters. Add remaining 1 cup mashed bananas and vanilla. Beat 1 minute. Bake in 2 greased, 8-inch round layer pans for 25 minutes. Spread with following frosting. Frosting: 1/4 c. butter or margarine 1 lb. confectioners sugar 1/2 c. mashed bananas 1/2 tsp. lemon juice Cream butter until soft and glossy. Add half the sugar. Beat until blended. Add bananas and lemon juice. Blend. Add remaining sugar and beat until frosting is light and fluffy.
