BRUSCHETTA SAUCE

2 tsp. minced garlic
3 Tbsp. olive oil
1/4 c. grated Parmesan cheese
2 1/2 c. Roma tomatoes, very finely chopped
1/3 c. fresh basil, thinly sliced
2 Tbsp. balsamic vinegar
1/2 tsp. salt
1 tsp. freshly ground pepper

Put all ingredients into a bowl and mix well. Let sit for at least
an hour at room temperature to allow flavors to meld together.

Serve on thin slices of toasted baguette or any other toasted bread
that you prefer.
