2-3 medium to large sweet potatoes 1/3 c. malt vinegar 2 tsp. fine grain sea salt Preheat oven to 375 degrees. Generously spray a large baking sheet with cooking spray. Scrub sweet potatoes and pat dry. Slice potatoes into thin discs. Place discs in a ziploc bag with vinegar and shake to cover them. Let stand for 12-15 minutes. Place all the discs in a single layer on the baking sheet. Spray with cooking spray and sprinkle half the salt on the potatoes. Flip them over and repeat on the other side. Bake 15-20 minutes until the potatoes are crispy. Let them cool completely before serving.
