4 c. thinly sliced yellow onions
5 Tbsp. butter
1/4 tsp. salt
pepper to taste
1/4 c. brandy
4 cans beef broth
5 toasted French bread rounds
5 slices Monterrey Jack cheese or grated Parmesan
In a large pan, saute onion until golden brown in butter. Add broth
and salt and pepper. Simmer 30 minutes. Add brandy and simmer 10
more minutes. Place cheese on toast. Ladle soup into bowls and
top with toast. Place in microwave for 30 seconds or until cheese
is melted slightly.
