2 c. chilled cooked rice
1 green pepper, sliced thinly
2 Tbsp. pimento, cut into strips
2 Tbsp. (or more) raisins
2 Tbsp. chopped parsley
2 Tbsp. chopped green onion
optional: chopped peanuts, flaked coconut, raw or frozen peas,
chopped carrots, or any other vegetables that you like with curry
Toss together and chill thoroughly.
1/2 c. olive oil
1/3 c. white wine vinegar
1 Tbsp. lemon juice
1 clove garlic, minced (optional)
1 Tbsp. sugar
1/2 to 2 Tbsp. curry powder (according to taste)
salt and pepper
Shake or whisk together to combine.
