cooked and diced potatoes, enough to fill a 2 qt. bowl
6 slices bacon, cut fine
2 Tbsp. flour
2/3 c. vinegar plus enough water to equal 1 1/2 c.
1/2 c. sugar
2 tsp. salt
medium onion, chopped fine
2 hard cooked eggs
Brown bacon. Add flour and stir. Add vinegar/water mixture, sugar,
salt and pepper to taste, and chopped onion. Cook until thickened
like good cream. Add 1/2 sauce to potatoes. Let stand 1/2 hour.
Add remaining sauce before serving. Garnish with eggs and paprika.
