1 box chicken Rice-a-Roni
6 oz. marinated artichokes, drained but save the juice
1/2 c. chopped green onion
1/2 c. chopped pimento-stuffed olives
1/2 c. chopped green pepper
4 oz. small mushrooms, drained
mayonnaise, to taste
1 tsp. curry
1 c. cooked chicken, diced (optional)
Cook rice according to directions. Chop artichokes and add to rice
with onion, olives, green pepper, and mushrooms. Mix mayonnaise,
artichoke juice, and curry to desired consistency and add to
mixture. Add chicken if desired.
