4 skinless, boneless chicken breasts
8 pineapple rings
1 clementine orange
12 oz. of your favorite BBQ sauce
Cut each chicken breast in half, the shortest dimension. Place
breasts in Dutch oven. Place a pineapple ring on each breast.
Place an orange section in the hole of each pineapple ring. Pour
all the pineapple juice over the chicken. Pour BBQ sauce over the
chicken. Bake at 350 degrees for about 45 minutes (or cook in a fire pit
full of hot coals and the top of the Dutch oven covered with hot
coals). Serve on a bed of rice or noodles.
